Cut the tortillas into six triangles using scissors. Lay the triangles on a baking tray and bake for 7-10 minutes, until lightly golden and crispy. Keep an eye on them as they turn very quickly.

Mash the avocado, Chiquita banana, lime juice and olive oil together in a bowl until smooth, then stir through the onion, garlic and cherry tomatoes until evenly dispersed.

Serve with the baked tortillas.

TIP: Make sure both the avocado and Chiquita banana are perfectly ripe for a super smooth consistency.
