Grate the carrot, prune the bananas and chop the walnuts. Beat the eggs with the honey and a pinch of salt frothy with a whisk or mixer.

Preheat the oven to 175 ºC. Then carefully whisk the oil through the honey-egg mixture. Sift the flour with the cinnamon and baking powder over the egg mixture and mix it together.

Scoop the grated carrot (squeeze out some excess moisture), the two mashed bananas and the chopped walnuts. Spoon the mixture into the spring form. Bake for about 50 minutes (check at 40 minutes) and then allow to cool.

For the topping, mix the honey with the yogurt. Divide this frosting with the convex side of a spoon over the carrot cake. Sprinkle with hazelnuts, slices of banana and sprinkle with cinnamon.
